ingredients:
3-4 chicken breasts (best to not use frozen ones)
mango chutney
white cheddar
olive oil
3 potatoes &/or sweet potatoes
salt and pepper
directions:
1) heat oven to 425ยบ.
2) cube your potatoes and place them on a cookie sheet and coat in 2 tablespoons of olive oil. place in the oven for 10 minutes.
3) cut each breast in half. then using a paring knife cut a little pocket into each half. fill each pocket w/ a slice of white cheddar and a spoonful of chutney {*lesson learned* pour enough chutney for all your breasts into a little bowl before you start stuffing. no cross-contamination ... salmonella and all!}
4) heat up 1 tablespoons of olive oil in a oven-safe skillet on medium heat.
5) remove the potatoes from the oven and flip & season. place them back in the oven for 15 more minutes.
6) add chicken breasts to the oven-safe skillet and brown each side for 3-4 minutes.
7) place the oven-safe skillet in the oven and let cook them cook for 8 minutes (this should be perfect w/ the timing of the potatoes).
protein and starches - just add some greens & a bread ... and you've got dinner! yum!
