20-minute meal: chicken & dill souvlaki

IN FACT - this one only takes 10 minutes to prep ... but i guess you can include a 10 minute trip to the grocery store.



ingredients:
* 3 tablespoons extra-virgin olive oil
* 3 tablespoons fresh lemon juice
* kosher salt and pepper
* 1 rotisserie chicken, meat sliced
* 2 Kirby cucumbers, sliced into thin half-moons
* 1/2 small vidalia onion, thinly sliced - or if you're like me and you
LOSE your onion btwn grocery store and home ... a tiny bit of
regular ol' yellow onion.
* 2 tablespoons chopped fresh dill
* 4 flat breads
* 1/2 cup plain yogurt, preferably Greek-style

directions
  1. in a large bowl, combine the oil, lemon juice, ¾ teaspoon salt, and ¼ teaspoon pepper.
  2. gold in the chicken, cucumbers, onion, and dill.
  3. divide the chicken mixture evenly among the flat breads and serve with the yogurt.
